Forelle Müllerin Art - (1996)
a recipe for trout after Schubert
for baritone and piano

Mmm... Mmm...
Die Forelle...
Zutaten (für vier Personen):
Vier küchenfertige Forellen,
Zwei Zitronen,
Pfeffer,
Knoblauchpulver,
Paprikapulver,
frische Petersilie oder Dill,
etwas Mehl,
Butter oder Öl zum Braten.
Zubereitung:
Die Forelle werden gewaschen,
trocken getupft,
sodann innen und ausgepressten Saft,
(Mmm, Saft)
einer Zitrone beträufelt.
Mmm...
Das Ganze zehn Minuten ziehen lassen.
Darauf wird die Forelle innen und außen
mit Salz, Pfeffer, Knoblauch, und Paprika gewürzt
Ein Zwieg Petersilie oder Dill wird in die Bauchhöhle gelegt...
und die ganze Forelle in Mehl gewälzt.
Ja, die arme Forelle in Mehl gewälzt.
Sodann Butter oder Öl in einer großen Pfanne erhitzen.
Die Ganze!
...und die Forelle auf jeder Seite scharf (ja, stark) anbraten.
Bei milde Hitze werden die Forelle
auf jeder Seite sechs Minuten gebraten.
Wenn die Forelle fertig sind,
werden sie mit Zitronen -
Achteln auf einem Teller angerichtet.
Dazu passen Petersilien
oder Rosmarinkartoffeln und gemischter Salat.

This recipe was suggested by baritone Frank Gertshofer in comic desperation at my suggestion that he pick a poem for a song. His wife's recipe for trout, scribbled on a scrap of paper -- an apparent compilation of some recipes -- and given to me as a joke, seemed only apt to make the joke larger by twisting Schubert's wondrous song elements into a parody, with the "spice" of some Gershwin-esque jazz chords imbedded into the setting itself alongside the famous accompaniment figure from "Die Forelle."
The middle point of the song setting finds the "poor trout" sizzling in a pan, to the secondary harmonic theme from Schubert's setting.
The final commentary is, of course, a short quote from Verdi's aria, "Di Provenza" from La Traviata, as befits this musical joke for a baritone. This specific recipe is found in many different versions, as this particular method of preparing trout is perhaps common, though not recommended via taste test by the composer.
